ROUTE FOOD:  Meatloaf began to appear in the US during the early 1900s.  It quickly became a favorite at diners and restaurants up and down Route 66.  A simple, economical, and satisfying dish, it is as American as the apple pie that many hungry travelers eat for dessert! 

Create a healthier version of this classic using lean Bison (buffalo) and portabello mushrooms.  When time is short and temperatures soar, cut cooking time in half by baking the meatloaf in mini-loaf pans or cupcake tins. Enjoy the dish with gluten-free shiitake gravy.
